Carrot Cake
- 2 cup sugar
- 1 1/2 cup oil
- 4 eggs
- 2 cup flour
- 2 tsp soda
- 1 tsp baking powder
- 2 tsp cinnamon
- 1 tsp salt
- 3 cup grated carrots
- 1 1/2 cup chopped nuts
Mix sugar, oil, eggs. Stir with spoon gently.
Sift dry ingredients, into mixture. Beat 1 minute, at medium speed (NO LONGER).
Add carrots and nuts.
Bake at 325° for 30~40 min. for layers or 50‑60 min. for oblong.
Icing
- 2 cup powdered sugar
- 4 oz cream cheese ‑ softened
- 1 1/4 cup margarine
- 2 tsp vanilla
Mix all together until smooth
