Carrot Cookies
- 1 cup shortening
- 3/4 cup sugar
- 1 cup mashed carrots (cool) Shred & simmer for 15 min
- 2 eggs
- 2 cups flour
- 2 tsp baking powder
- ½ tsp salt
- 3/4 cup coconut
Cream shortening & sugar; add eggs and carrots.
Sift dry ingredients and add to creamed mixture.
Add coconut.
Drop by spoonfuls on cookie sheet.
Bake at 375° for 8-10 minutes.

- 1/4 cup butter
- 1 cup powdered sugar
- 1 tsp orange juice
- 1 tsp orange rind
