Chili Mac
- 2 Tbsp oil
- 1 lb. ground beef
- 2/3 cup chopped green pepper
- 1/3 cup chopped onion
- 1 can (28 oz) tomatoes
- 1 can (15 oz) kidney beans, drained
- 1 Tbsp sugar
- 1 1/2 tsp salt
- 2 tsp chili powder
- 1/4 tsp pepper
- 1 c water
- 2 Tbsp vinegar
- 2 cup (8 oz) uncooked elbow macaroni
Heat oil in large pan.
Add beef, green pepper, and onion and cook over high heat, stirring constantly until meat loses its red color.
Reduce heat, then add tomatoes and beans.
Combine remaining ingredients, except macaroni, and add to meat mixture
Heat to boiling, reduce heat, cover and simmer for 25 min.
Gradually add uncooked macaroni, stir well.
Return to boil; then reduce heat, cover and simmer for 20 minutes longer stirring often.
